Of course, potato leek soup is at its amazing best when the leeks are fresh from the garden and the potatoes are new and in season. My husband and I leave our leeks in the garden throughout the winter. We just cover them with the appropriate amount of leaves to keep them from freezing. We did the same with carrots and beets. It is the middle of March right now. You should taste the crunchy sweet carrots my husband dug up for me yesterday! It’s hard to believe how good they still are. I also had froze quite a few bags of leeks that I chopped up, put in ziploc bags and frooze last year. They still taste incredible! I use them is soups, stews and curry dishes.

This Heavenly scent recipe is bursting with flavor and creamy goodness. It takes mere minutes to make a pot, but also mere minutes to devour it! Lol.

Potato Leek Soup Recipe

Ingredients:

  • 1/4 cup coconut oil (that is my preferred choice for this soup)
  • 1/4 cup butter
  • 2 cups fresh leeks, chopped
  • 2 cups potatoes, cubed
  • 2 cups of water
  • 1-1/2 tsp salt
  • 1/4 tsp pepper
  • 3 cups organic chicken or vegetable broth
  • 1/4 cup coconut cream or milk
  • 1/2 cup of half and half cream (or milk for less fat)
  • 2 tsp fresh squeezed lemon
  • 1/3 cup fresh Italian parsley, chopped

Preparation:

  1. Saute leeks in oil and butter until soft
  2. Add in cubed potatoes, saute a bit more.
  3. Add in water and broth and simmer until potatoes begin to soften.
  4. Add in remaining ingredients except Italian Parsley, do not boil, simmer on low for 20 minutes.
  5. Serve hot with fresh chopped Italian Parsley and homemade bread or buns.
