Green Romano Bean Salad

Fresh green Romano bean salad. Think about it. It just doesn’t get any better. Honestly people, I feel guilty sharing these Romano Bean Recipes when I know that a large part of the world does not have access to them! Romano beans provide a crunchy and juicy flavor to whatever dish you choose to add them to. They have a kind of a nutty taste to them.

Juicey and Flavorful

When I described these beans earlier in the Romano Bean Story, I was not exaggerating. When I said they were succulent and juicy and flavorful, I was serious!! Now, imagine a salad made out of these beans picked fresh from the garden earlier that day. They do not take second place to any other pole or bush bean that exists, it is plain and simple, there just is no comparison!

Now that I have said all that, lol, there is still the problem for most people of inaccessibility. The best advice I can offer for all the green Romano bean recipes, is to substitute with the freshest, heartiest green bean that you can find in your part of the world!

Green Romano Bean Salad

Ingredients:

  • 4 cups fresh picked Romano Beans
  • 3 tbsp. extra virgin olive oil
  • 2 tbsp. fresh squeezed lemon juice
  • 1-2 clove minced garlic
  • 1 tsp. oregano (I used 2 tbsp. fresh chopped oregano from my herb garden)
  • 10 Kalamata olives
  • 1/2 cup crumbled feta cheese (or 1/2 cup bocconcini cheese thinly sliced) Salt and pepper to taste

Preparation:

  1. Cut ends off fresh green beans.
  2. Lightly boil them just until they are still a bit crunchy.
  3. Rinse them under cold water.
  4. Toss well with olive oil.
  5. Add lemon juice, feta, oregano and seasonings.
  6. Chill in fridge until ready to serve.
