If you are looking for a simple and very tasty cod soup recipe, well Cod Almighty, you have come to the right place!

Cod is such a versatile type of fish, blending well in so many Italian Seafood recipes. That is why I really enjoy using cod in various types of dishes.

Another nice thing about cod is that when you buy it fresh or even frozen, it never seems to have a strong fish smell or taste to it.

This cod soup recipe has a warm, inviting and delicious ambience which makes it a winner in the winter (and the spring for that matter!) Like a mentioned above it is a very simple dinner recipe and takes no time to make at all. Lots of veggies and spices make this cod soup a healthy choice as well.

Note: Focaccia bread dipped in olive oil and balsamic vinegar is the perfect pairing with this outstanding soup.

Italian Cod Soup Recipe

Ingredients:

  • 3 large pieces of cod fish
  • 2 tbsp. olive oil
  • 2 tbsp. butter
  • 2 clove garlic, minced
  • 1/4 tsp chili flakes
  • 2 shallots, or 1 small onion chopped fine
  • 3/4 cup celery, chopped
  • 1 small red pepper, diced
  • 3 medium sized carrots, sliced
  • 1 small red pepper, chopped
  • 1/2 green pepper, chopped
  • 1 cup crushed or blended tomatoes
  • 2 cups water
  • 3 cups organic vegetable or chicken broth
  • 2 tbsp. fresh squeezed lemon juice
  • 2 tsp. dill
  • 1 tsp. Italian seasoning
  • 1 tsp. salt
  • fresh pepper
  • 1/3 cup Arborio rice
  • 1/3 cup fresh chopped Italian Parsley

Preparation

  1. Place oil and butter into large saucepan.
  2. Add garlic, chilies shallots, celery, carrots and peppers.
  3. Saute on medium heat for about 5 minutes.
  4. Add in cod pieces and cook on low for 1 minute while while gently stirring being careful not to over cook or breakup cod.
  5. Add tomatoes, simmer another 2 minutes
  6. Add water, vegetable or chicken broth, lemon juice and spices.
  7. Add ring bring to a low simmer for 15 minutes or until rice is cooked.
  8. Add in Italian parsley and serve with lemon wedges and warm focaccia bread.

Cook Time: 30 min.
Serves: 6
