If you love garlic, then this is the garlic chicken pasta recipe for you! It is an authentic Michele Romano Italian Pasta recipe. Simple to make and not extremely time consuming. Garlic is the main focus and flavor used in creating this incredibly satisfying garlic chicken pasta recipe.

Prepare the chicken ahead of time in your skillet by marinating in olive oil and fresh garlic. Meanwhile (back at the ranch), simply boil your pasta until al dente. Quickly toss pasta into zesty, aromatic garlic sauce .

This garlic chicken pasta recipe will compliment any type of pasta you choose to use. I used ancient grains non GMO spaghettini mixed with catelli smart spaghettini. Remember you can be creative with your choice of pastas, such as whole wheat, gluten free, brown rice pasta, Quinoa and organic pastas as well.

I served this pasta dish with a simple homemade Caesar salad. It was the perfect combination, like eating a garlic Caesar, chicken pasta salad! So delicious!!

Note: If available to you, I like to use enamel pots and fry pans for making my sauces. Most Italians swear by them for making the best tasting sauces. In my experience, I have found it to be true!

Garlic Chicken Pasta Recipe

Ingredients:

  • 3 chicken breasts, sliced
  • 1/2 cup extra virgin olive oil
  • ¼ cup butter
  • 8 garlic cloves, minced
  • ½ tsp crushed red pepper flakes
  • 1 tbsp salted capers (sometimes they are hard to find so you may have to use capers in liquid but drain them)
  • 1/2 tsp salt
  • Pepper
  • ½ cup fresh Italian parsley or fresh basil, chopped
  • 1/3 cup fresh grated Pecorino Romano or Parmesan cheese
  • 1 – 454 gram package spaghettini, cooked al dente

Preparation:

  1. Heat oil and butter in large skillet or fry pan.
  2. Add minced garlic, red chilis and capers.
  3. Fry 2 minutes on medium low heat.
  4. Add sliced chicken breasts, salt and pepper to pan.
  5. Stir fry until chicken is cooked.
  6. Remove from heat, let sit to marinate.
  7. Meanwhile boil pasta in salted water until al dente.
  8. Drain pasta then add an appropriate amount to fry pan and toss until pasta is coated with oil and garlic sauce.
  9. Toss in fresh parsley or basil and half of the fresh grated cheese.
  10. Serve hot with chicken breast pieces adding remaining cheese, salt and pepper to taste.
