Heavenly Scent Creamy Broccoli Soup Recipe

My daughters both loved this rich and creamy broccoli soup recipe growing up. They still do till this day. As a matter of fact, I made a big pot of scrumptious broccoli soup last night. My daughter, Chelsey is coming for the remainder today! I swear she could smell it from her house. Lol. My carnivorous husband, (since it does not have meat in it) even enjoyed my soup and had seconds for lunch today!

I put this soup in the category of extremely healthy, quick and easy. Have you looked up the health benefits of broccoli lately? Broccoli is called a “miracle food” and the list of its health properties is staggering! What is also great is that it takes no time at all to make a pot full.

I also add fresh carrots from the garden, which we leave in the ground covered by leaves until Spring when we replant. The carrots are still sweet, crunchy and juicy as of yesterday when my husband dug up a bucket full. Great news is that you can buy nice sweet organic carrots in most supermarkets today.

Creamy Broccoli Soup Recipe

Ingredients:

  • 1/2 cup butter or
  • 1/4 cup butter
  • 1/4 cup organic coconut oil
  • 1 medium onion, diced
  • 1 cup celery, chopped
  • 1/2 cup flour (for thickening)
  • 3-1/2 cups of organic chicken or veggie broth (900ml carton)
  • 1 tsp. salt
  • 1/4 tsp. seasoning salt
  • 1/4 tsp. pepper
  • 3 cups broccoli, washed and cut into bite size florets
  • 1-1/4 cup carrots sliced
  • 2 cups carrot and broccoli water (steam vegetables and reserve water)
  • 1 cup milk
  • 1-1/2 cups sharp grated cheddar cheese

Preparation:

  1. Saute onions and celery in butter until onions are soft in a large soup pot.
  2. Add chicken broth and seasonings.
  3. Meanwhile in a separate pot steam carrots and broccoli putting carrots in the bottom of steamer and broccoli on top.
  4. Reserve water from steaming vegetables. (If you do not have a steamer, boil vegetables and reserve 2 cups of the water.)
  5. Add water from vegetables to soup pot.
  6. Add vegetables, bring to a slow simmer.
  7. Stir in milk and cheddar cheese.

Note: Do not let boil after you add milk and cheese, only a slight simmer until ready to serve. The reason for this is so that the milk does not curdle.

Prep/Cook time: 1 hour

Serves: 6-8
