Hamburger Soup is Always a Welcome Sight to Road Weary Travelers

I make this soup frequently when family is traveling home from out of town or just coming to visit. A big pot of hamburger soup is always a welcome sight to road weary travelers.

My Italian hamburger soup recipe is full of vegetables making it extremely healthy and very hearty. If you follow the instructions below you will end up with quite a large soup pot so it will go along way. I always make Italian fergosa bread recipe to go along with the soup. Note: For a smaller crowd you can always cut recipe in half although it freezes beautifully.

Italian Hamburger Soup Recipe

Ingredients

  • 2 lbs lean ground beef
  • 1/4 cup olive oil
  • 1 1/2 cups onion, chopped
  • 1 tsp red pepper flakes- optional
  • 1 1/2 cups celery chopped
  • 1 1/2 cup potatoes, diced
  • 1 1/2 cup carrots, sliced
  • 2 cups cabbage, shredded
  • 1/3 cup of green pepper, diced
  • 3 Italian plum tomatoes, diced
  • 1 large can (28 oz) diced tomatoes
  • 1 small can (14 oz) tomato sauce
  • 6 cups water
  • 1 – 900 ml carton (almost 4 cups) organic vegetable broth.
  • 3/4 cup Arborio Italian rice (you can use other types of rice as well)
  • 4 tsp salt
  • Pepper
  • 2 – 1/2 tsp oregano
  • 2 – 1/2 tsp basil or 3/4 cup fresh chopped basil

Preparation

  1. In a large soup pot, brown hamburger, onion and pepper flakes well in olive oil.
  2. Add in all the prepared vegetables, stirring and saute for 5 minutes
  3. Stir in tomato sauce, canned tomatoes, water, broth.
  4. Add seasonings simmer for 5 min.
  5. Add rice, partially cover with lid.
  6. Simmer on low heat for 45 minutes stirring occasionally
  7. Note: Grated mozzarella or cheddar cheese is yummy on this soup.

Prep Time: 45 min.

Cook Time: 65 min.
