Very unique and very addicting! It is an awesome change from chicken, turkey or ham soup. These are all fantastic soups however, this soup recipe is unique and flavorful. It is one of my easy and healthy Italian cooking recipes.

You can choose the amount of spiciness by using mild or hot Italian sausage in this soup. Fresh herbs always add the best flavor to soups so I use them when ever possible.

Sausage Soup Recipe

Ingredients

  • 1 – lb or approx 5 hot or mild Italian sausages
  • 3 tbsp extra virgin olive oil
  • 1/2 medium onion, chopped
  • 2 large cloves garlic, crushed
  • Optional: 1/4 tsp red pepper flakes {These can make soup extra spicy , especially if using hot Italian sausage}
  • 4 medium carrots, thinly sliced
  • 3 stalks celery, chopped
  • 1 mini red pepper, 1 mini yellow pepper chopped fine
  • 1 – 28 oz can tomatoes, chopped
  • 5 cups chicken broth (homemade or store bought.)
  • 2 cups water
  • 1 tbsp dried Italian parsley
  • 1/2 cup of orzo or tiny pasta such as tubettini or ditali
  • 1 tsp sea salt
  • Pepper
  • 1/4 cup fresh basil, chopped (2 tsp dried)
  • 1/2 cup fresh grated Romano or parmesan cheese.

Optional: 1 small can of Romano or pinto beans.

Preparation

  1. Heat oil in soup pot, take sausage out of casings, cut in rounds and add to pot.
  2. Add in onion, garlic and red pepper flakes, stir fry for 7 minutes
  3. Add celery and carrots, saute for 2 min.
  4. Stir in chicken broth, water, tomatoes and parsley. Simmer for 15 min. (Add beans if you are using)
  5. Add pasta, basil, salt and pepper. Cover and cook until pasta is al dente (about 10 minutes)
  6. Serve hot with grated cheese.

Prep Time: 30 min.
Cook Time: 32 min.
