Italian Swiss Chard Patties
Italian Swiss chard patties are incredibly healthy and ooh soo tasty. Turn any ordinary meal into a nutritional powerhouse with this astonishing vegetable.
The patties are one of my favorite Swiss chard recipes. Serve them with salsa and sour cream, with Thai sweet chili sauce drizzled on top, pair them up with a pasta dish, or even for breakfast with scrambled ham and eggs or, or, or, lol the list could go on and on. Who would have thought……… (Certainly not my husband) that you could even make a patty without meat!
Ordinary Dinner Into a Healthy Dinner
Swiss Chard really is a versatile member of the green family. It is quite amazing how you can turn an ordinary dinner into a healthy dinner simply by adding this astonishing Italian side dish to the menu.
My Dad likes to saute this super food in olive oil with lots of garlic and sprinkle Parmesan cheese in as it cooks. I love it!

Italian Swiss Chard Patties
Ingredients:
- 2 cups cooked swiss chard (approx. 2 store bought bunches)
- 3/4 cup bread crumbs
- 1/4 cup Parmesan or Romano cheese
- 2/3 cup old white cheddar cheese
- 2 large eggs, slightly beaten
- 1/4 cup green onions, chopped
- 3/4 tsp garlic powder
- 1/2 tsp salt
- Pepper
- 1 tsp oregano
- 3 tbsp extra virgin olive oil or coconut oil for frying (I like using coconut oil mixed with1 tbsp butter for this recipe)
Preparation
- Wash and chop very small a large bunch of fresh swiss chard. (Discard or reserve larger stems for eating separately)
- Boil chard until soft, strain water from cooked chard, let cool.
- In a large bowl, mix breadcrumbs, eggs, melted butter, both cheeses, green onions and seasonings.
- Blend cooled chard in thoroughly using your hands.
- Form mixture into patties, each about 1/2 inch thick.
- Fry in hot oil until golden brown on both sides.
- Serve with a dollop of sour cream, salt and pepper to taste.
Prep Time: 30 min.
Cook Time: 20 min.
Serves: 6
