Is there anyone on Gods green earth who does not adore a phenomenal Caesar Salad recipe? Even my five year old grandson gobbles it up!

There are plenty of variations on how to make Caesar salad recipes and many different variations caesar salad dressing recipes. I have a few myself, see my upcoming cookbook Romano/Toscano Top Secret Recipes . However, this particular Italian salad recipe is second to none! Creamy and full of flavor with roasted garlic and tangy dressing, this recipe is always a hit. Add in some toasted slivered almonds or pine nuts and some dried cranberries to make it a healthy celebration of flavor!

Roasted Garlic Caesar Salad Recipe

Ingredients

  •     Fresh head Romaine lettuce or bag of organic Romaine hearts
  •     1 whole lemon, cut into wedges
  •     3 – Slices bacon (broiled and crumbled)

Caesar Salad Dressing Recipe

  1.     1 large whole garlic bulb, roasted
  2.     1 tbsp. fresh squeezed lemon juice
  3.     1 tbsp. balsamic vinegar
  4.     1 tsp Worcestershire sauce
  5.     1 tsp mustard powder or 1 tsp Dijon mustard
  6.     2 and 1/2 tbsp. extra virgin olive oil
  7.     2 tbsp. heavy cream
  8.     2 anchovies-optional
  9.     1/3 cup fresh grated Romano or parmesan cheese
  10.     3/4 cup plain organic yogurt or Greek plain yogurt
  11. Optional- 1/4 cup toasted slivered almonds (few drops of olive oil, sprinkle of garlic powder and place under broiler until lightly toasted. Optional – 2 tbsp. dried cranberries

Preparation

  1.     Brush garlic with olive oil and wrap in tinfoil, bake at 350 for 1 hour.
  2.     Squeeze garlic cloves into food processor or container for hand blender.
  3.     Add all remaining ingredients and blend until creamy.
  4.     Chill in refrigerator until ready to mix on salad.
  5.     Serve lemon wedges on side of salad.

Note: I usually serve with garlic toast or Italian bread etc so, as a rule I do not add croutons, but that is completely optional.
