Italian Broccoli Salad Recipe
Wow! Geeg’s Italian broccoli salad recipe with Kalamata olives is not only addicting but very very healhty. Broccoli packs the most nutritional punch of any vegetable. Geeg would prepare this incredible Italian salad recipe for us on many occasions. Now I make it all the time (so do my daughters).
I love this unique and fabulous salad best after it has marinated awhile and dressing has had a chance to soak into the broccoli!
It is a beautifully colored salad to place on your table. The broccoli combined with the lemon, kalamata olives and garlic make it an unbelievable healthy salad recipe. Broccoli salad is also very delicious the next day after the dressing has soaked in good.

Broccoli Salad Recipe
Ingredients:
- 2 large heads of broccoli crowns
- ¼ cup extra virgin olive oil
- 1/4 cup fresh squeezed lemon juice
- 2 cloves garlic, chopped
- 1 tsp oregano
- 10 to 12 Kalamata olives
- Salt and fresh grated pepper to taste
Preparation:
- Breakup broccoli crowns into florets. (Short stems may be left on each floret.)
- Boil broccoli until tender. (Not mushy, keeping a nice green color.)
- Drain broccoli, quickly rinse with cool water and place in a salad dish.
- While broccoli is still slightly warm, pour lemon juice over it and toss well.
- Wisk extra virgin olive, garlic, salt and pepper together in a separate bowl.
- Gently toss oil mixture until it evenly coats broccoli.
- Add Kalamata olives, throughout the salad.
- Serve warm or cold. It’s fabulous either way! If serving cold, let marinade a couple hours stirring occasionally.
