I never realized how easy and fun these would be to make. By the way, both sauces are equally delicious. It is just a matter of preference which to choose. I will provide the simple cream sauce recipe below.

Homemade Italian Gnocchi Recipe
Ingredients:
- 2 cups mashed potatoes (approx 3 large potatoes)
- ¼ cup milk
- 2 tbsp butter
- 2 large egg yolks
- 2 tbsp grated Romano or Parmesan cheese
- 1 cup unbleached organic flour (plus extra for flouring surface)
Gnocchi Preparation:
- Peel and boil potatoes until soft.
- Add ¼ cup milk and 2 tbsp butter, mash until creamy.
- Mix in the egg yolks, parmesan, then gradually blend in the flour.
- Work with your hands until a loose dough is formed, then transfer onto a floured surface.
- Divide the dough into approx 6 portions, rolling into a rope about ½ inch thick, cut each rope into 1/2 inch lengths.
- Press your finger into each piece of dough to make a concave shape, then roll a fork over the outer surface to make deep ridges. Fold the outer edges in toward each other to make a hollow in the middle.
- Bring salted water to boil, add gnocchi in batches stirring gently. Cook 1-2 minutes or until they rise to the surface. Remove with a slotted spoon.
- Serve with pasta sauce of your choice.
