Panna Cotta simply means, cooked cream, which makes this recipe a very uncomplicated dessert to make! Quick and easy, fuss free preparation takes about 25 minutes to prepare. Allow for a couple of hours setting time in the refrigerator.

Remember: Do not add more gelatin than recipe calls for or the result will be a rubbery texture. That is what I did when first experimenting with this recipe! You think it is not going to set, but it will. After the Panna Cotta has set, serve with fresh or frozen berries, such as blackberries, strawberries, raspberries or blueberries. This yummy Italian dessert recipe is a beautiful, light, fruity finish to any meal!

Panna Cotta Recipe

Note: Do not be tempted to add more gelatin than recipe calls for, it will set, it just takes patience! (2-4 hours worth, lol)

Ingredients:

  • 1-3/4 cup heavy cream
  • 4 tbsp sugar
  • 1/2 tsp vanilla
  • 1-1/4 tsp knox gelatin
  • 2 cups fresh or frozen berries (strawberries, black berries, raspberries)
  • 2 tbsp sugar or maple syrup to sweeten berries

Preparation:

  1. Place the cream and the sugar in a saucepan, stir over gentle heat until the sugar has dissolved.
  2. Bring to a boil, reduce heat, then simmer for 3 minutes.
  3. Add vanilla.
  4. Sprinkle gelatin into hot cream and stir until dissolved into the cream.
  5. Pour the mixture into four glass dessert dishes. (If you want to be fancier, you can use dessert moulds instead.)
  6. Cover with plastic wrap and refrigerate until set.
  7. Mix berries with sweetener of your choice, serve on chilled, set Panna Cotta.

Refrigerate: 3-4 hrs
