Heavenly scent chocolate beet cupcakes with rasberry cream cheese icing! Rich, velvety, scrumptious delights are just a few words to describe these (A beet treat that cannot be beat!)

I love the idea of using healthy vegetables in dessert recipes, such as carrot cake or pumpkin cookies.

My chocolate beet cupcakes does not call for an overload of sugar. The beets are a great source of natural sugar on their own. Beets provide the cupcakes with healthy fibre and create a beautiful moist texture in them. Gluten free flour can also be used as a substitute for regular flour in this recipe.

Raspberry cream cheese icing is the perfect and delicious way to spread on top these delightful cupcakes!

Chocolate Beet Cupcakes Recipe

Ingredients:

  • 1 cup organic unbleached flour
  • 1/4 cup organic whole wheat flour
  • 1/4 cup unsweetened cocoa powder
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup canned beets, drained
  • 3/4 cup organic cane sugar
  • 1/4 cup organic canola oil (or coconut, grape-seed or oil of your choice.)
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup buttermilk (or plain organic yogurt or coconut milk)
  • 1 cup (250 gram) cream cheese
  • 1/2 cup frozen or fresh raspberries
  • 1 cup icing sugar

Optional: raspberry dark chocolate or plain dark chocolate bar for top decoration.

Preparation:

  1. Preheat oven to 350F.
  2. Mix dry ingredients together in a bowl.
  3. Puree beets in blender or food processor.
  4. Beat sugar, oil, egg, vanilla together and slowly add in beets and buttermilk.
  5. Pour into dry ingredients and mix well.
  6. Line 12-cup muffin tin with cupcake liners or brush with oil.
  7. Divide batter into cups.
  8. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
  9. Let cool on rack before icing.

Icing preparation:

  1. Beat cream cheese on high speed until smooth and creamy.
  2. Slowly add in icing sugar, continue beating.
  3. Last, on slow speed, blend in frozen or fresh raspberries.
  4. (If need for easier spreading I added a few drops of coconut milk.)

Prep Time: 30 min.
Cook Time: 25 min.
Serves: 12 cupcakes
