Italian meatloaf is very easy to make. As I said, your husband and kids will love it! The sauce is tangy, yet sort of sweet at the same time. (With which you smother your potatoes in.)

Easy and Healthy

This recipe makes an easy healthy meal that goes along way. Served with boiled potatoes and/or yams , or creamy polenta (see polenta recipe below), and broccoli.

Meatloaf is an enjoyable yet simple dinner idea. An inexpensive timeless classic!

I know we all loved meatloaf when we were growing up not to mention the yummy meatloaf sandwiches you could make from the leftovers the next day!

Italian Meatloaf Recipe

Optional: Change it up by stuffing meatloaf with Mozzarella!

Ingredients:

  • 1 1/2 lb lean ground beef
  • 2 tbsp Italian parsley, chopped
  • 1 medium onion, chopped fine
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup milk
  • 1 tsp ground oregano
  • 1/4 tsp dried chilies – optional
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/4 tsp pepper
  • Optional: for stuffed meatloaf recipe, add 1 cup fresh grated mozzarella cheese

Preparation:

Mix all the above ingredients together thoroughly in a large bowl. It is easiest to use your hands, kneading the meat mixture at the same time. Form into a loaf and place in a roasting pan.

If you are stuffing with mozzarella, split meat, dig a well in loaf, fill with cheese and cover with remaining meat.

Meatloaf Sauce Ingredients:

  • 2 tins tomato soup (yes, I do use the occasional can of soup in a recipe)
  • 1 1/2 cups water
  • 1 1/2 tbsp vinegar
  • 1/2 tbsp mustard or mustard powder
  • 1 1/2 tbsp brown sugar

Preparation:

  1. Whisk all the above ingredients together.
  2. Pour over meatloaf.
  3. Cover and bake at 350 degrees for 1 hour.

Prep Time: 20 min.
Cook Time: 60 min.
Serves: 6

 

Creamy Polenta Recipe

Ingredients:

  • 1 1/2 cups milk
  • 1/2 cup chicken broth
  • 1 cups water
  • 3/4 cups of instant polenta (cornmeal)
  • 1 tbsp butter
  • 1 tsp salt
  • Fresh ground pepper

Preparation:

  1. Bring first 3 ingredients to a boil
  2. Whisk the Polenta in until the mixture begins to thicken
  3. Stir in butter, salt and pepper
  4. Continue to cook and stir for 5 minutes.
  5. Serve immediately with chicken and sauce.
