Fresh Springtime Peas & Pasta Recipe
An early Summertime treat in the Romano family when the peas are fresh and ready for the picking! Also, fabulous if you have frozen fresh peas. This dish is vegetarian and depending on your choice of pasta, can be gluten free as well! Quick and easy, peasy!
Fresh Sprintime Peas & Pasta Recipe
Ingredients:
- 1/3 cup extra virgin olive oil
- 1 tbsp butter
- 1-1/2 cup fresh peas
- 5 whole green onions, chopped
- 1 1/2 cups water
- 1 ½ tsp salt
- 375 grams fresh cooked spaghettini
- Fresh grated Parmesan, Romano, or Grana Padano cheese
Optional: Fresh Italian parsley, chopped on top
Preparation:
- Pour olive oil and butter into a soup pot.
- Saute chopped green onions for one minute.
- Stir in peas until coated with oil, saute one more minute.
- Add water, salt and pepper.
- Simmer for about 2 minutes or until peas are tender, remove from heat.
- Boil pasta in slated water until al dente.
- Note: Do not drain all pasta water, reserve about half the water in the pasta as this dish should be juicing and pasta soaks a lot of juice.
- Add peas and onion in oil and toss well into the pasta.
- Serve hot with lots of cheese, salt, pepper and fresh Italian parsley.
