Holiday’s, parties, relaxing to watch a good movie, or just having a day of watching sports, (that would be my husband) these two healthy appetizer recipes never fail to please a crowd or your family. They are fun to make, taste, test and serve. Both recipes have been favorites for many years. They are quick and easy to make and nutritious and delicious to eat! The Cold taco dip boasts a creamy avocado bottom layer. You cannot stop at just one chip!

Three Layered Cold Taco Dip Recipe
Bottom layer
- 1-250 gram tub of Philadelphia soft cream cheese (1 softened 8oz brick can also be used)
- 1 ripe avocado
- Mash cream cheese and avocado together with a fork until very creamy.
- Spread onto a round dinner plate or a fancy round plate.
Middle layer
- 1 cup (250ml) sour cream
- 1 package taco seasonings mix
- Blend sour cream and seasoning together until mixed well.
- Spread on top of bottom layer.
Top layer
- 1 cup of grated cheddar cheese
- 1 cup of diced fresh tomatoes
- Cover middle layer with cheddar cheese
- Spread the diced tomatoes evenly on top of the cheese.
- Chill in the fridge until ready to serve.
Optional – Sprinkle fresh chopped cilantro on top of the tomatoes or just a few sprigs for garnish.
Dip your taco/tortilla chips until your hearts content!
Hot Layered Taco Dip Recipe
- 1 1b lean ground beef
- 1/2 onion, chopped
- 2 jalapeno peppers, seeded and chopped or 114 ml can whole green chilies
- 4 Roma tomatoes, chopped
- 1 tbsp chili powder
- 1/8 tsp cumin
- 1 tsp salt
- 1/4 tsp pepper
- 1 14oz can refried beans
- 1-1/2 cup shredded Monterey Jack cheese
- 1/4 cup fresh cilantro, chopped-optional
- Scramble fry ground beef adding in onion, peppers, tomatoes and spices.
- Stir in refried beans
- Place meat mixture in bottom of 9×9 baking dish
- Sprinkle Monterey Jack cheese on top.
- Bake in 350 degree oven for 15 minutes.
- Remove from oven and sprinkle fresh cilantro on top.
Serve with organic taco chips or some healthy homemade pita chips. Do not forget the heavenly healthy homemade guacamole on the side. Last but not least, sour cream or plain yogurt for dipping as well. This could be one of your families favorite easy healthy meals.
