Recipe For Spinach Frittata with Mushrooms Italian Style
There is nothing like Michele Romano’s recipe for spinach frittata Italian style. Made with fresh vegetables in season (if possible), mushrooms and fresh farm eggs, spinach frittata is a wonderful and very nourishing way to start out your hectic day.
A frittata is Italy’s famous version of an open faced omellete. The difference is, unlike an omellete it is cooked on both sides (fried on one, broiled on the other). Frittata is kind of like a healthy breakfast pizza (without all the dough).
Left over Frittata? No problem. Have it later for a healthy snack or reheat for next mornings breakfast.
There are numerous frittata combinations, so it is fun to use your creative imagination when making them. Children, (like my 3 year old granddaughter) love them because they are like a pizza in shape and depending on your choice of ingredients, can taste similar to pizza as well. Especially when I add capicola and sliced Italian salami from the meat shop, topped off with fresh sliced tomatoes! Make it with meat or make it vegetarian. Note: Use a cast iron or oven safe fry pan or skillet.

Recipe for Spinach Frittata
Ingredients:
- 2 tbsp olive oil
- 2 tbsp butter
- Optional – 5 slices fresh capicola, 5 slices fresh Italian salami. (I sliced into bite size pieces)
- 1/2 onion, diced
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 3/4 cup mushrooms, sliced
- 3 cups baby spinach, chopped
- 1 tsp oregano
- 1/2 tsp chilies
- 6 organic brown eggs
- 2-3 tbsp water (makes fluffier eggs)
- 1 squirt fresh lemon juice
- 1 tsp salt
- Fresh grated pepper
- 1 1/2 cup grated cheddar cheese. (or cheese of your choice.)
- 1 tomato, sliced thin
Preparation:
- Saute meats (if using) all vegetables and spices in oil and butter using skillet or fry pan.
- In a separate bowl, whisk together, eggs, water, lemon juice, salt and pepper.
- Pour egg mixture evenly over fry pan mixture.
- Cover and cook on medium heat until bottom of frittata is cooked and lifts up on sides using flipper. Approx. 10 minutes.
- Add cheese, covering top of frittata, add tomato slices on top of cheese, (placing a bit of cheese on top of each tomato slice).
- Place frittata, under the broiler until it is cooked through and golden on top.( It is a good idea to set timer for ten minutes and check progress and set timer again)
- Slice into triangles like a pizza pie.

Cook Time: 30 min.
