About Darrell’s Mustard Beef Ribs Recipe
When most people think about ribs, they are usually thinking baby back pork ribs. These beef ribs are a nice change, just as tasty, but altogether different.
Note: If beef short ribs are not available in the grocery store, then stew meat serves as a delicious alternative.
If time is on your side when preparing this dish, then by all means using a slow cooker if you have one. You can put them on in the morning on low or in the afternoon on medium and by supper time they will be ready to eat and delectable to say the least! We all know that slow cookers make for divinely tender ribs or stew meat.
Serve with an Italian tomato salad, fresh baby potatoes, or a baked potato and some fresh green beans mixed with baby carrots!
OMG, the juice in the ribs is a perfect sauce for spooning onto boiled baby potatoes!

Italian Mustard Short Ribs
Ingredients:
- 2 lbs beef short ribs or 4 large Texas style short ribs
Marinade recipe:
- ¼ cup extra virgin olive oil
- 2 heaping tbsp Dijon mustard
- 2 cloves garlic, crushed
- 1-1/2 tsp Montreal steak spice
- 1-1/2 tsp oregano
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tbsp water
- 1 medium onion, sliced
Preparation:
- Preheat oven to 325 degrees.
- Place ribs in roasting pan.
- Whisk all marinade ingredients together except onions.
- Brush marinade into all sides of ribs until well coated. (Any excess, pour over meat)
- Cover with sliced onion, add water.
- Cover and bake at 325 degrees for 2 hours.
- Baste ribs with mustard sauce once or twice while cooking.
- Using tongs, turn ribs over half way through cooking.
Prep time: 25 minutes
Cook time: 2 hours in oven
Serves: 4
