Oh man, these are so simple to make! My new favorite for lunch, snack or in place of a side salad. And I mean, can you get any healthier than avocado? My husband even gave this creation a very big 2 thumbs up!

They also look so pretty sitting on the plate and if you are having a luncheon with your girlfriends or other guests. Presentation is very important!

Stuffed Avacado Recipe with Balsamic Drizzle

Note: I base this recipe on 2 avocados, but you can make as many as your little heart desires.

Ingredients

  • 2 ripe (firm, not mushy) avocados
  • 1 small container of cottage cheese
  • 2 green onions, chopped
  • 1 ripe Italian Roma tomato
  • Extra virgin olive oil for drizzling
  • Aged balsamic vinegar for drizzling
  • Salt and pepper
  • Garnish with fresh chopped Italian parsley or fresh basil

Preparation

  1. Slice avocado in half (going around outside with a small knife)
  2. Take out pit.
  3. Using a large soup spoon, scoop out each half of avocado.
  4. Chop green onions into cottage cheese, stir in.
  5. Dice Roma tomato in small pieces.
  6. Fill hole in each avocado with cottage cheese, onion mixture.
  7. Top with diced tomatoes.
  8. Drizzle extra virgin olive oil all over top.
  9. Drizzle balsamic vinegar over top.
  10. Salt and fresh grated pepper.
  11. Garnish with fresh basil leaves or fresh Italian parsley leaves.

Prep Time: 15 min.
Serves: 4

1) Nutrient-dense fruit

Yes, they are actually a large berry with one seed. One avocado contains approximately 1/3 of the daily requirement of vitamin K and folate, lots of pantothenic acid, vitamin B6 and vitamin C.

Avocado has twice the potassium of a banana. It also contains vitamin E, niacin, and riboflavin. That is definitely nutrient-dense!

2) A Source of Healthy Fat

They help increase good cholesterol. Avocados are full of fat, but adding avocados to the diet can increase HDL and decrease triglycerides.

The glutathione found in avocados has been found to help prevent some kinds of cancers.

Researchers found extracts from Hass avocados kill or stop the growth of pre-cancerous cells that lead to oral cancer.  Avocado extract was found to inhibit prostate cancer.
