Note: This recipe is based on an 8 x 8 inch glass dish. Double recipe for a 9 x 13 inch dish.

Eggplant Parmesan Recipe
Ingredients:
- 1 large eggplant
- ¾ cup flour
- Salt and pepper
- 1 cup olive or grape seed oil
- 1-¼ cup Passata strained tomatoes
- ½ basil, torn basil leaves
- 1-¼ mozzarella cheese, grated
- ⅔ cup parmesan, grated
Preparation:
- Preheat oven to 350 degrees.
- Thinly slice eggplant in rounds.
- Lightly coat each slice with flour.
- Heat ¼ cup of the oil in large fry pan.
- Quickly fry the eggplant in batches over moderately high heat until golden on both sides.
- Add oil as needed when frying.
- Place eggplant on paper towel as rounds are fried.
- Place a layer of eggplant, slightly overlapping in bottom of casserole dish.
- Lightly season with salt and pepper.
- Spread ½ cup strained tomatoes over eggplant.
- Scatter ¼ cup fresh torn basil on top.
- Sprinkle with some mozzarella followed by some parmesan cheese.
- Continue with this layering process until you have used up all the ingredients.
- Bake for 30 minutes, remove from oven.
- Let set for 20 minutes before serving.
